Idaho Candy Company has been making bars in Boise since 1901. Their lineup has been built and refined over decades, and every bar in it has earned its place. National Candy Month is the right occasion to work through all of them.

Here's how they rank — and what makes each one distinctive.

1. The Idaho Spud Bar

The flagship. Introduced in 1918, the Idaho Spud Bar is the bar that defines Idaho Candy Company's identity. Cocoa marshmallow center, dark chocolate coating, coconut sprinkled on the outside. Shaped like a potato. It has been made in the same Boise factory for over 100 years and is unlike anything else on the market. If you try one Idaho Candy bar, this is the one. 

2. The Cherry Cocktail Bar

The most distinctive bar in the lineup. A whole cherry sits at the center, surrounded by cherry cream, then encased in freshly roasted peanuts and premium milk chocolate. The combination creates a layered eating experience no other candy bar replicates. Made since 1926. 

3. The Huckleberry Gem Bar

The most distinctly Pacific Northwest bar Idaho Candy makes. Huckleberries are wild-harvested in the mountains of Idaho and have a flavor unlike any cultivated berry — tart, complex, and immediately recognizable to anyone who grew up in the region. For first-timers, it's a genuine discovery. 

4. The Vandal Bar

A tribute to the University of Idaho Vandals, the Vandal Bar is a caramel-flavored marshmallow bar molded in the shape of the iconic 'I,' wrapped in smooth premium milk chocolate and finished with a sprinkle of sea salt. The sea salt finish is the detail that makes it — it cuts through the sweetness and makes the caramel marshmallow sing. A natural for Vandal fans and a great bar for anyone who appreciates the sweet-salty combination. 

5. The Bronco Bites Bar

A sweet salute to Boise State University, the Bronco Bites Bar wraps buttery caramel and crunchy dry roasted peanuts in smooth premium milk chocolate, topped with blue, orange, and white sprinkles. It delivers on texture — the crunch of the dry roasted peanuts against the soft caramel is a great combination — and it's as fun to look at as it is to eat. 

6. The Old Faithful Bar

Named after Yellowstone's most famous landmark, the Old Faithful Bar has been made since 1925. Vanilla marshmallow, whole peanuts, milk chocolate. It's the most approachable bar in the lineup and a great starting point for anyone new to Idaho Candy.
